Happy Wednesday, my peeps! I hope your week is off to a great start! We are trying to get back in action here and I started the week feeling behind on all the things! I hate when I start a week feeling behind! I was not winning at life last week in the dinner department. I just couldn’t get it together and our dinners were all over the place last week. This week, I vowed to do better because it can be so stressful when it’s 4pm and I don’t have a dinner plan! I am not a whip up what I have in the kitchen kind of gal either! So, I realized I need to use my Crock-Pot more (and meal plan). It’s such a great cooking tool and honestly, the possibilities are endless with what you can make in them! One of our favorite recipes is a Crock-Pot chicken taco recipe. I learned about this recipe MANY years and I truly can’t recall where I found out about it? I think I read about it somewhere, but we have been making it for years! That being said, it truly is one of the best and easiest slow cooker recipes that we make! And the other day when I made it, I realized I had never shared it here on the blog! What!!! I had to remedy that immediately! You guys have also requested a few recipes here and there, so I will definitely try to add more of my favorites here! This recipe makes delicious chicken that works well in tacos, burritos, salads, quesadillas and on nachos! We usually eat it two nights because we always have leftovers! It’s the perfect recipe because it can be used so many different ways!
The Best and Easiest Slow Cooker Chicken Taco Recipe
Ingredients
- 2-3 Chicken Breasts You can also use frozen
- 1 can of Rotel
- 1/4 cup of Olive Oil
- 1/4 cup of Water
- 1 packet taco seasoning you can use chicken taco seasoning or regular taco seasoning. I use whichever I have on hand and there is not a difference in my opinion
Instructions
Directions:

Pour taco seasoning in the bottom of slow cooker, place chicken breasts in, pour olive oil, water and Rotel on top.

Place lid on slow cooker and cook on low for 6 hours (or until cooked through).

Once it's cooked through, shred chicken and let sit in the juices for a few minutes!

Then serve it up and enjoy!

Love making crockpot chicken taco meat! I often use a jar of one of our favorite salsas! It’s moist enough to just mix with the frozen chicken breasts and taco seasoning! In fact, maybe I need to do this today! Thanks!
