Happy Wednesday lovelies! It feels like Tuesday to me and I think that’s because we travelled all day Monday. Tuesday felt like Monday. I was dragging all day. Trying to get back into the swing of things. Including my food intake, since I was a crazy all weekend and ate lots of junk! Two springs ago, I found myself needing to add in more of a workout/eating routine, Reagan about 7 months old and I was ready to get my body in tip-top shape (which is a never-ending process!) I spent a lot of time on Pinterest searching for healthy recipes to make. This energy bite recipe is one of our all time faves! We all love it! These are so great to pop in my mouth in the am for a quick breakfast on my way out the door and also for a healthy snack for myself or the little presidents and with the chocolate and peanut butter added, they think it’s a treat! They are really into to helping me cook lately and this is one of our fave recipes to make together!
The necessities:

Flaxseed Meal~1/2 cup
Rolled Oats~1 cup
Chocolate Chips~1/2 cup
Peanut Butter~1/2 cup
Vanilla-1 teaspoon
Coconut Flakes~1 cup
Honey-1/3 cup
*Chia Seeds~1 tablespoon
*this is an addition to the original recipe. It was my sister’s idea. 🙂
**we have also added dates, almonds and subbed almond butter in these. The possibilities are endless with what you can add.
We start off by dividing up the jobs/ingredients. This is key to cooking with the little presidents without fighting. Ha! You can see Reagan trying to grab the cup from Teddy. 🙂

Even mommy gets a turn…usually the honey and peanut butter. They are both usually eating all the ingredients by this point anyway! Ha!
Dump all ingredients in the bowl.
The little presidents are HUGE on taste testing. They LOVE peanut butter and chocolate chips!
After all the ingredients are mixed together, put the bowl in the fridge for about 30 minutes to let it harden a bit.
After it’s been in the fridge for at least 30 minutes, roll into individual balls and put them in an airtight container and keep in the fridge…they won’t last long, if your house is anything like ours. 🙂 The finished product is so delish and really for the most part, healthy. They are so so good with a cup of coffee! Yum!
