Happy Thursday, my peeps! It’s a double post kind of day! This one will be short and sweet! I posted our dinner last night on my STORIES and had SO many requests for the recipe, so I wanted to throw it up here really quickly for you! One of my best friends shared this recipe with me a few years ago, so I’m sure I’ve lost items and added things along the way! It is a delicious weeknight dinner option and it’s so easy!
EASY WEEKNIGHT CHICKEN RECIPE
Ingredients

- 4 Chicken Thighs Bone-In
- 4-5 Chicken Drumsticks
- Head of Garlic peeled
- Olive Oil I just eye it. I would say 2-3 tablespoons
- Container of Cherry Tomatoes whole
- Big Container of Basil
- Salt and Pepper

Preheat oven to 325 degrees

Basically all I do is pour some olive oil in the bottom of my DUTCH OVEN.

Then, I add about 4 bone-in chicken thighs and 4-5 chicken drumsticks on top.

I cover with pink salt and pepper and more olive oil.

I throw in a whole head of peeled garlic. I just toss the little (whole) garlic pieces all around the dish, so they are evenly distributed.

I toss a container of cherry tomatoes on top (whole) and then take a whole bunch of basil (stems chopped off) and throw that on top.

I bake at 325 degrees for about an hour and a half, or until the chicken is done.

Bake with the lid on.

Halfway through, you can mix it around. Sometimes, I do this, sometimes I forget. Either way, it's just as good! But the mixing helps get more of the juices evenly distributed!

I usually serve with a veggie and salad or a starch. Last night, I served it with roasted butternut squash and wild rice. It was delicious!
