Hey there lovelies! I hope you are having an awesome week! I was sitting in my kitchen on Sunday, trying to come up with a meal plan for the week. I haven’t done it in ages. I have been flying by the seat of my pants most days and dinnertime is usually a chaotic blur, so I figured I would get back on board with meal planning…or least attempt it. So, I started thinking about what sounded good and this recipe came to mind that someone brought us after Reagan was born. I asked for the recipe and then, made it a lot right after she was born, so naturally, as always, I ate it too much and I (and my hubs) were over it and it’s been a longggg time since I have made it…I can’t even remember which friend brought it over either. I sat here trying to remember the recipe and wished I remembered who brought it so I could text or email them…So, anywho, I tried to recreate it myself as best as I could remember.
The necessities:
Bow-Tie Pasta (cooked and cooled) *you can use any type of pasta.
Champs dressing
Fresh mozzarella (balls or cut into cubes)
tomatoes
arugula
