Gluten Free Sugar Cookie Recipe

Hi friends and happy Friday! I hope you’ve had a great week! This post is coming at a great time because I am headed into the weekend with a marathon baking day planned for tomorrow! Every year, I make a ton of sugar cookies and also homemade cinnamon rolls. I am so thrilled to partner with JCPenney for today’s post because I really needed to update a few of my baking products and I was able to find all I needed and more online! Side note, does anyone else remember the JCPenney catalog? I used to spend hours pouring through the pages and circling all the things I wanted. My siblings and I would have to take turns and we’d all use different pen colors, so that Santa and our parents knew who wanted what. Ah, those memories. But, back to baking!

I spent about 3 years of my life eating gluten free and during that time, I really tried to perfect all of my favorite recipes into to gluten free recipes. My sugar cookie recipe does not disappoint. It’s one of my favorite recipes, plus you can use this recipe to make my gluten free sugar cookie truffles and those are also amazing if I do say so myself! Ha! I am a huge fan of gold touch cookie sheets and I was thrilled to find so many options at JCPenney! I was able to grab this awesome set of numerous sizes and I love them all. Most importantly, they all fit into my french oven, so I am even more thrilled about that. I prefer to bake on these pans because things are less likely to stick because of the nonstick technology. They are all I have used for years! JCPenney has a huge selection. Of course my favorite mixer is always a great price at JCPenney, too! Besides my baking sheets, my mixer is another one of my most loved and used kitchen products! I couldn’t resist this set of nesting kitchen bowls either. When baking cookies and most recipes, more than one mixing bowl is necessary and this set is amazing quality and easy to store! All in all, I am thrilled with the pieces that I was able to grab to spruce up my holiday baking! Which, speaking of, all of these items would make amazing gifts for the baker in your life! Gluten Free Sugar Cookie Recipe

Gluten Free Sugar Cookies

Ingredients

  • 1 1/2 cups All Purpose Gluten Free Flour
  • 2 tsp baking powder
  • 1 tsp salt
  • 1 cup (2 sticks) butter
  • 1 cup sugar
  • 2 tsp vanilla
  • 1 egg

Instructions

  1. -Preheat Oven to 400 degrees. Line baking sheets(s) with parchment paper

    -In a large bowl, blend flour, salt and baking powder together 

    -In a mixing bowl, combine softened butter and sugar and beat together until mixed.

    -add in egg and vanilla

    -after all combined, slowly add the flour mixture with the mixer on low

    -chill dough for at least 20 minutes in the fridge

    -roll it out on a floured surface, using cookie cutters to create shape

    -Bake about 8-10 minutes (each oven is different, so I recommend keeping an eye on the first batch!)
